Christmas Sugar Cookies

Christmas Sugar Cookies






1 1/2 cups butter, softened



2 teaspoons baking powder

  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  3. Bake 6 to 8 minutes in preheated oven. Cool completely.

How to Make a Lunchbox Mason Jar Cup

Good afternoon!

Well my little one is in Pre-K and she takes her lunch to school everyday. I usually pack her a juice box but I wanted to give her some variety. I had nothing to put something like milk or that in, so I looked online and found this idea. It works pretty well!

All you need is a mason jar, a lid ring, and a milk/juice carton with a twist cap. Cut the carton around the cap in the shape and size of the jar ring. This will be your lid.

 
 
Put the carton lid into the ring.
 

Then just place lid on mason jar real tight and your done!

And now you have something that you can put milk, juice, anything!! Just make sure the lid and the cap are closed tightly. Don't want any spills.

Sneaky Vegetable Pasta

Sneaky Vegetable Pasta

2 tablespoons olive oil
1 small onion
1 clove garlic, minced
1 carrot, chopped
1 zucchini, chopped
1/2 cup mushrooms, sliced
1 can of crushed tomatoes
1/2 cup vegetable broth
1/4 teaspoon brown sugar
salt and pepper to taste
1 bag bow tie pasta
 
 
In a skillet over medium-high heat, sauté onions and garlic in olive oil until tender. Add carrots, zucchini, and mushrooms and cook until softened. Add tomatoes, broth, sugar, salt and pepper. Simmer for 5-10 mins. Remove from stove and let cool slightly. Cook pasta. While pasta is cooking, puree vegetables in blender. Toss cooked pasta with vegetable sauce and serve.

I wanted something cute for my little one's door, so started looking around the house and in my craft area and finally found a purple foam E and some stick on jewels. I just put them on and all done! She loved it! So simple yet super cute.

God is So Good!!!




This is one of my favorite verses in the bible. It reminds me that even if I'm going through a hard time God will always come through. When I look back at my life and think ,What if I had gone to junior college instead art school? What if I had stuck to my "no dating during senior year" rule? What would my life be like now if I had made different or better choices?

Then I realize I wouldn't change a thing. If I were to change anything I may not have my little one or my amazing husband. Even with all the pain I went through it was all worth it because in the end God gave me the two most important people in my life.

So no matter what you are going through, always remember that God is with and He always has a plan. Just keep praying and never lose faith.

BLT Pasta

BLT Pasta

My family loves this recipe, even my little one who is very picky. I found it in a Cuisine at Home magazine and just love it. Enjoy!





Pasta:                                                                                                
  • 2 strips thick-sliced bacon, diced                                                                                               
  • 1 cup grape tomatoes, halved                                                                                              
  • 1/2 tsp sugar                                              
  • 1/2 cup leeks, thinly sliced                                                                                                
  • 1/4 cup dry white wine                                              
  • 1/2 cup chicken broth                                             
  • 1 tsp red wine vinegar                                             
  • 1/4 tsp red pepper flakes                                              
  • 4 oz dry bucatini or spaghetti
  • 1 cup fresh spinach leaves                                             
  • 1/4 tsp minced fresh thyme (or a pinch of dry thyme)                                             

  • For garlic bread crumbs:                                              
  • 1 clove garlic                                                                                                
  • 1 cup French bread, cubed (about one 1/2 inch thick slice)                                                               
  • 1 T olive oil                                                                                                
  • salt to taste


  •  Bring a pot of salted water to a boil for the pasta.
  • Mince the garlic for the bread crumbs in a food processor, add the cubed bread, and process until coarse.
  • Heat oil in a nonstick skillet over medium: add crumbs and toast until golden, 3-4 minutes, stirring often. Season with salt and set aside.
  • Saute the bacon in a large skillet over medium heat.
  • Cook until crisp, then drain on paper-towel. Pour off all but 1 T. drippings.
  • Caramelize the tomatoes and sugar in the drippings over medium heat.
  • Cook until beginning to brown, about 5 minutes.
  • Add the leeks, saute until wilted, 3-4 minutes.
  • Deglaze with wine; simmer until liquid is nearly evaporated.
  • Add the broth, vinegar, and pepper flakes and simmer until reduced by 1/3, about 5 minutes.
  • Cook the pasta in boiling water according to package directions.
  • Add the spinach, thyme, and bacon pieces to the sauce.
  • Transfer the cooked pasta from the pot to the pan using tongs.
  • Toss to coat.
  • Season with salt, then transfer to large serving platter or individual plates.
  • Sprinkle with garlic bread crumbs before serving

    20 Reasons Why I Want to Homeschool

    1. It's safer. I feel much better having my little one here at home with me then in some big building that someone can shoot up. Call me paranoid but that's just how I feel.

    2. She will have the freedom to learn what she wants to.

    3. We can have prayer and a religious learning base.

    4. She won't have to worry about bullying or peer pressure.

    5. No 5 a.m. mornings when its raining and gross outside. No running to catch the bus or rushing to get everyone to school on time.

    6. Family vacations can count as "Field Trips"

    7. I have more control over what she learns and when she learns it.

    8. More time for extra actives. Plus they can count as art or gym credit. It becomes part of their school curriculum instead of something else to add to your already crazy schedule.

    9.She can get the attention and help she needs. (Since the student:teacher is great)

    10.She will be social with people of ALL ages.

    11.Save money not having to buy back-to-school clothes and supplies. My husband and I spent over $100 this year for our daughter's school things. She is only in Pre-K and for only 3 hours! The list was crazy. When I was in school, my parents never had to buy things like paper towels and dry erase markers. I'm dreading next year... The list for kindergarten is even bigger.

    12. I'll know what is going into the food she eats. plus she wont have to get use to the taste of cafeteria food. (And if any "Bones" series watchers are reading this, they understand why I make my daughter's lunches.)

    13. More time together as a family and it will bring everyone closer together.

    14. We all can learn new things together. I have already learned some new things teaching my little one and I'm excited to learn more.

    15. Don't have to worry about wither or not the school is safe or has good scores.

    16. She can learn at her own pace.

    17. She wont be sitting in class for 8 hours straight, hungry, tired ,and bored. We can take breaks, mix things up, eat when we want to and take naps if needed.

    18. She wont be piled up with homework if she gets sick.( I always seemed to get sick when all my classes had the most work to do...)

    19. We can have scripture learning and bible study as part of the curriculum.

    20. We can do activities and games whenever we want. What kid doesn't love getting messy?

    Now I'm not saying you have to homeschool or that there is anything wrong with public school kids. (My husband and I both went to public schools). I just feel that homeschooling would be the best thing for my daughter and family. But in the long run I'm going to leave it up to my daughter, if she wants to be homeschooled, Great! If she wants to go to public school then that's what we will do. As long as she is happy, healthy, and learning then I couldn't ask for anymore.

    Almost everyone who has ever baked cookies has had this problem. Hard, barely bite able cookies. Yuck!!
    Well a while back I figured out a trick to keep my cookies soft. Even after several days ( if they last that long) they are still soft. My secret?

    Cream Cheese!!!

    Every time I use cream cheese my cookies come out great. I just put a little bit in with the butter, sugar, and brown sugar and mix it in. That simple. My family loves them.

    Also to make them a little healthier, I like to use margarine instead of butter. It's more heart healthy and easier to work with in my opinion. Or you can just skip the butter all together and just use cream cheese. I ran out of butter the one day so I decided to try it without and they tasted the same.

    Since this is a post about cookies and holidays are coming up, I'm going to share a cookie recipe that I use to make my dad. ENJOY!





    M&M Cookie Bars

    -1/2 cup of butter ( or margarine)
    -3/4 cup sugar
    -3/4 cup brown sugar
    -2 eggs
    -2 teaspoons vanilla
    -1-1/2 cups flour
    -1 teaspoon baking soda
    -1/2 teaspoon salt
    -1 cup chocolate chips
    -1 cup M&Ms

    If you want add about 2 table spoons of cream cheese with the butter.

    In a large bowl, cream butter and sugars until light and fluffy. Mix in eggs and vanilla. In separate, combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in chips and 1 cup of M&M's. Spoon into a greased 13-in. x 9-in. baking pan; spread evenly in pan. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.                                         Makes: 2 dozen.

    The Life of a Redheaded Mommy: Meet Me!

    Hello! My name is Heather Anderson. I'm 24 years old and married to an amazing man named Ike. Together, with the Lord, we are raising our beautiful four year old daughter, Evelyn ( or Evie). Ike and Evie are my world and I do everything I can to make sure they have a happy, healthy, Christ-centered life.





    I grew up in Pennsylvania and moved to Texas at 15 after my parents divorced. At 19 I gave birth to my daughter Evelyn. When she was 9 months old her birth father left us and I became a single mom. It was pretty scary to suddenly be raising an infant by myself over night but I was incredibly blessed with amazing and supportive parents who took us in and helped every step of the way. I picked myself up, got a job and focused on being a good mommy. It was tough but I did it!

    When I was 21 I met my husband. We met through my friend, now sister-in-law, Shannan. She asked me to come out to the Stockyards with her, her boyfriend, and his brother. I was going through a lot at the time and wasn't really up for it, but she convinced me other wise. To this day I'm very glad she did. If I hadn't gone out that night, I never would have met her boyfriend's younger brother and marry him two years later. Funny how God works!!

    Now we are a happy little family. Ike loves Evie like his own and she sees him as Daddy. I am truly blessed to have such a wonderful family, a beautiful little girl, and a loving husband who helped me find the Lord.
